Dessert that is almost healthy.
I say almost health because i do not think any sugar is healthy even if the sweetener is natural.
Organic Strawberries with Chocolate Creamcheese
1 cup of homemade creamcheese (room temp)
1 cup of raw or organic heavy cream (straight from cold fridge)
2 tsp homemade vanilla
Organic cocoa powder and sweetener to taste.
I used a combination of 1/2 cup of rapunzel rapadura and green leaf stevia. Probably about 3/4 to 1 cup of cocoa powder. Mixing bowl, beaters. Add cream cheese, vanilla, sweetener, cocoa powder to bowl and mix on low to incorporate cream cheese and dry ingredients. Once mixed add heavy cream a little at a time until smooth. Hold back about 1/2 a cup of cream. Once it is well mixed and smooth add the rest of the cream and whip up on medium speed.
The kids are growing fast and ready for a their new home! They are just over 2 months old now. Very spunky, healthy, and affectionate. The girls have nice teats for their age and i am hoping between both their parents milk lines will make their future owners very happy with their milk production and udders.
One of the boys was MIA when this photo was taken. The 2 kids in the forefront are Hannlei's kids. She is also for sale as i have decided i would rather pursue Mini-Nubians. She is currently in milk.
This on is the 2nd buckling that was MIA from above. He looks very similar to the male above. He has better confirmation than the male above as well and cute waddles. This buckling and the 2nd white doeling in the photo (behind the other doeling) are Layla's kids. I am selling this mom as well. She is currently in milk.
About 3:30pm Hanalei began labor and was finished before 4pm. We have another pure white doeling and one more beautifully patterned buckling.

Tonights dinner: Bone broth soup.
3 Chicken breasts were cooked in broth made that i made over the weekend. They are in a different pot. Melt 2 tblspns of butter in pot, low medium heat. Dice; 6 carrots, 4 celery stalks, 1/2 a small head of celeriac, 1 green zucchini, 1 leek, 2 turnips, 1 medium onion, 8 cloves of garlic, 1/2 a bunch of red dandelion greens, 1 bunch of baby bok choy (greens from ends of bok choy and dandelion reserved for later use).
After butter has melted i saute carrots and celery for about 5 minutes while dicing the rest of the
vegetables. I dice and add them in depending on how long i like them to cook. Next would be celeriac, turnips, leek, baby bok choy, zuccini, onion, garlic. Saute for about 5 minutes, i check with fork to see if the veggies feel aldente. I had chopped the greens during this time. Next add in the chopped greens for a couple of minutes followed by 2 qrts of broth. While it comes to a low boil i dice up the already cooked chicken breast, add it and let it all cook for about 5 minutes. Salt and pepper to taste.
